Anyone ever done a English Pale or stock Ale with Brett? Looking to do one with WLP005 + WLP645 + WLP648. Looking for a beer that is complex mix of fruit ester, bread & caramel malt, floral hop, leather and funk from Brett with a low-moderate bitterness.
I have a British IPA where half got Oak and Brett C. It is an attempt to recreate the beers that were made back in the day. The Brett is drying it out compared to the half that did not. Brett C only gives a little Brett character, but I was not after what you get in Lambics and such. This beer will take some time to hit its peak, but I am patient.
I'm interested in this. Great idea. There used to be a beer that I would drink back in the day that had an interesting character to it from the use of dual yeast strains, Whitbread. It's no longer like it used to be, and I'm not sure if there was any brett to it, but it was really interesting. Keep us updated!
About 3 oz. in the keg(s) for a week, then pulled them. I can always dry hop again after aging, akin to dry hopping in the cask before serving.
