As I'm sipping my first Double Daisy Cutter, I can't help but dream of the Galactic Double Daisy Cutter...and that reminds me of HF's Galaxy Imperial Single Hop IPA, another huge love. These are both unfortunately not easily attainable and readily available. Are there any readily available Galaxy hopped beers that you can recommend? Any great seasonal ones to look out for?

Sadly I have no recommendations for you here, but Galaxy is a newer hop to the scene and is still gaining popularity (and is hard to come by - similar to citra). These limiting factors are likely playing a role here.

8-bit pale ale from Tallgrass just came out and is hopped with Galaxy. Might be worth seeking out.

Stone/The Alchemist/Ninkasi More Brown Than Black IPA is dry-hopped w/ Galaxy and Citra.. it's pretty easy to find around my parts, but it might not be drinking like it was fresh..

Anchorage recently came out with a Galaxy Wit. There's also an Indianapolis brewery that has a pale ale using Galaxy hops that's always my go to.

Bootlegger's recently made and is, I heard, about to bottle Galaxian Batleywine. Haven't tried it yet but have heard good things.

I think that Surf Brewery's South Swell DIPA might have both galaxy and Nelson hops.

I had my first Galaxy Ale this past fall from Shorts brewery in Michigan, it has an amazing nose of tropical fruits, pineapple and citrus. After searching the interwebs for galaxy hop I finally found a half pound and now I have a Galaxy Pale ale fementing on my closet that smells amazing! Dry hopping with two ounces tomorrow.

Not helpful at all, but Iron Hill and Pinocchio's Beer Garden in Media, PA collaborated a Galaxy/Citra IPA for Pinocchio's anniversary this year that was awesome. "Real Boy."

EDIT: THought there was citra in there, but may have been 100% Galaxy hopped.

Slumbrew's Flagraiser IPA is a good example
Hill Farmstead's Double Galaxy is a better example.

I love this beer so much, I've had it twice and I still have two more bottles. I think it's still great even though it's almost 3 months old. I hope Stone decides to brew it again...

Yep, that was going to be my recommendation too. Pretty good stuff.

New England Brewing's Galaxy Pale Ale on cask is still one of the best smelling beers I've ever had. My favorite PA, now hopefully they can find more galaxy hops to make it again.

Marshall Brewery came out with Arrowhead Pale Ale hopped with Galaxy last year. It's very nice and plenty of hop flavor and bitterness. Not sure how far distribution gets out but it's worth seeking out.
I also have 2 Anchorage White IPA's hopped with Galaxy and Brett yeast added. Looking forward to cracking one of those open soon.

Not that this answers your question really, but, Mimosa = Galaxy (+ Citra!)
