Galaxy IPA with Brett claussenii recipe?

    hey,
    I was wondering if anyone's either brewed this or think it would work.

    I was thinking of brewing an IPA with Galaxy hops and a nice, woody bittering hop. I'd use Brett clauss as the yeast to give it a crazy bouquet. would it be overkill with Galaxy hops and which bittering hop would go well with Galaxy?

    I can't really give any advice from experience using galaxy in my own beer, but I think big fruity hops could work really well with Bret C. If I were to get my hands on some galaxy hops for an IPA I'd probable pair 'em with CTZ.

    No need to pair Galaxy with something dank/resinous like Columbus... I've brewed a bunch of IPAs with Galaxy, and found that in addition to passion fruit/misc tropical fruit if you do a whirlpool/hopstand with Galaxy it gives a massive resinous/dank flavor, so no need to use a CTZ type hop.

    I wonder what a RyePA with double hop galaxy and brett would taste like...

    Has anyone ever tried a Nelson/Galaxy or Citra/Galaxy combo before? I think those two hops would be outstanding together... Especially if you throw some brett in there...

    not sure if i would go the kumquat/corriander route, but yeah, i guess something like that.

    bottle aging w/brett, though, would be different than the primary fermentation w/brett. not sure if the flavour would change at all with time w/this strain of brett, and that freshness would be key for good enjoyment.

    I've done both.... Nelson and Galaxy work well together, but the three times I've done that combination I've kept the Nelson at pretty low amounts (~80% Galaxy, ~20% Nelson). Detectable gooseberry and wine flavor, but tropical fruit and resinous flavors in front.

    I've used Citra in combination with Galaxy before as well, but only as part the second dry hopping (1st dry hop in fermenter, 2nd in keg). In all cases, it took about 3-4 weeks for the Citra aroma to fade, and meld with the beer, after which, the beers were great. When used in the boil, I liken Galaxy to a much more resinous Citra, with more passion fruit and less cat piss & lychee.

    have you seen the article in the current zymurgy? there's some content from chad yakobsen re: 100% brett fermented beers which provides some good perspective on how to formulate recipes and get the most out of beers like these. There are quite a few blogs out there posts w/ anecdotal experiences w/ brett fermented hoppy beers. You can find discussions on the topic on other boards, such as this, too.

    Brett C , middle of the IPA range IBUs, w/ galaxy/citra/nelson S sounds fantastic to me. dont' go overkill on the late/dry hops, you'll want to be in relative balance w/ the brett C contributions. or maybe you don't!

    I like your approach better I think than what was going on with this beer. It was interesting, but drinking a full bomber would have been a challenge (let allow a whole homebrew batch). Starting with brett in the primary would give it the nice funk but should give it time to work out all of the sulfur notes.

    I agree on not adding the kumquat and corriander, at least on your first batch. If you like the results and think they could add something then go for it. But it is nice to try new things as simple as possible that way you know what to tweak later on.

    no clue. its a new world for me.
    this beer was a morning epiphany. just thought about it and it made sense. no clue what grains i'll use (probably something basic. i'll keep the mouth feel pretty tame and colour-wise, i'll keep it more blonde than dark). it may be a May/June brew for me.
