Gingerbread stout aged?

    I know what the standard general consensus about aging this type of beer is but I would love to hear from people who has actually tried this with some age on it and what their thoughts were. I'm thinking of stashing a bottle away for a year or 2 in the name of science just to see how much it changes/falls off/develops.

    Don't do it. I had extra bottles and kept them till the next year. Taste was very different and not for the better. Off flavors and almost more cola like. Drink them fresh not to exceed 3 -4 months would be my vote.

    ^^^What he said. I drank a '13 and '14 side-by-side and while neither one really impressed me, the '13 was significantly less appealing. Cardboard/wet earth/unpleasantness abounded.

    someone gifted me a 14 last week. Trying to land a 15 to try side by side. I'll report back if I can land the 15.

    I had a '14 Bourbon GBS recently and it was great! You just have to make sure you have cellar conditions when aging any GBS.

    I forgot about a '13 GBS (yeah, I know) in the cellar and just drank it the other day. Awful. Disjointed flavors and off flavors galore. I really, really didn't enjoy it.
