Gluten Free Brews?

    I hate the new gluten-free craze as much as the next rational adult, but I do have a friend with Celiac disease I'd like to brew a beer for.... so here I am.

    Anybody on here have experience making gluten-free beers? I can only imagine between protein quality, fermentability, and flavor there is a fair amount to account for when selecting alternate grains.

    It's the 'flavor' part that is the major issue when brewing a GF beer. All kinds of things have been used to substitute for the barley or wheat, but no one has come up with anything that has been a solid winner. I think the various commercial attempts that have had the best response from the consumer have been the ones that use a genetically engineered barley, which I think is just low gluten, not gluten-free. But I don't know the details of the availability of this grain or whether it has a gluten level that is low enough for someone who has Celiac vs. who is gluten sensitive.

    I was just asking this passively elsewhere. Clara-ferm reduces gluten to 10ppm i think (fda calls this "free), rice will work, other grains

    A good friend of my wife (his name is Gary) has a son who is intolerant to gluten. A couple of years ago we brewed a Sorghum Porter for his son. Gary and my wife liked this beer but I didn’t care for it.

    Last year we brewed a ‘regular’ Porter but used White Labs Clarity Ferm (I got a free vial at the 2013 NHC). That beer was tasty (enjoyed by all!) and it had greatly reduced gluten.

    I would suggest brewing a ‘regular’ beer and add Clarity Ferm.
