Hi All - I live in Virginia and will be traveling to St. Louis for a few days in the beginning of February. I wanted to get opinions on what would be the best brewery to visit as if someone said, the world is ending but ONE brewery and you can choose it, which would it be and why? I will likely only have a couple hours one of the evenings to check things out so I can't visit more than one. So, i'd like to make the most of my time and visit the best. Caveat: I'd rather not hit a brewery that distributes to VA. Opinions? And why?

I can! Here would be my stops, in order 1. Perennial Brewery, fantastic beer on tap and bottles as well of typically the most recent releases, sometimes some hidden gems on the cellar list that you're never going to get otherwise 2. Side Project Cellar, it's new but again fanastic beer on tap, including Side Project all the time 3. The Wine and Cheese Place, for bottles again to take home Honorable mention in no particular order is 4 hands brewery, schlafly brewery, urban chestnut, etc.
I will say Side Project Cellar (not a brewery per se but bar/tasting room) and Schlafly Bottleworks are only about 375yds apart so that may be a good option
