Good Breweries/Beers in Melbourne, Australia

I'd check out www.craftypint.com.au for a relatively comprehensive list of places. Mrs Parma's is good for local Victorian beer. The Local Taphouse and Beer DeLuxe are both good, if pricey, for a wide range of stuff. Alehouse Project is nice and DeJaVu was a good little bar last time I was in Melbourne. Mountain Goat is worth a visit on the nights they are open along with The Royston across the street. Slowbeer is also a worthwhile stop for their four quality taps and comprehensive bottle selection (they are a hybrid store/beer cafe).

On a different note, I'll be in Melbourne from Monday if you'd like to meet up for a drink at some point.

Temple in Brunswick is back up and running and making some great beers, their New World Order stout is particularly good. Moon Dog in Abbotsford are opening a bar soon, it may be open in time for your stay but I'm not sure. Otherwise the above mentioned by other posters, I'd also add in The Great Northern in Carlton, and maybe try Neuw Amsterdam in the city, had good food and a decent beer list last I was there.
