    I've seen a lot of posts in this forum about kettle souring versus spontaneous fermentation with bacteria as the difference between Goses and wild ales
    Not to thread Jack – but can someone please explain to me the difference in these two processes?

    I'm just trying to understand the true process- Thanks!
