Has anyone had any luck using a plate chiller without a pump?
If so any tips would be appreciated.

Absolutely. Works perfectly for purposes of chilling, although there are certainly some things gravity plate chilling prevents you from doing (e.g., hop stand post boil). What tips are you looking for?

I run 18 gallons through mine all the time without a pump.

Mainly what is the best way to set up that sort of system?
Right now I am using a bucket full of ice water and pumping that through a copper chiller using a small pond pump set in my boil kettle
Works great but I need to return the chiller to the brewer I borrowed it from. So time to buy my own.

At club brews we use a plate chiller but we pump everything. I dont want to/cannot afford a pump yet but love the plate chiller.

Honestly, this is going to be completely contingent on your brewing space. Really no need to over-think things. Just make sure that you have some downward flow from the kettle to the plate chiller. I would recommend testing your setup with some water prior to your first beer just to make sure everything works out as expected.
