Grisette hop varieties and quantities?

    I’m hoping to brew a simple grisette soon with Pilsner, red wheat and flaked wheat. Using belle saison yeast.

    I just did a super saison with 3711 and Amarillo that turned out great but I’m not sure what I want to play around with for the grisette in terms of hop varities, quantity and schedule. Don’t care if it is single hop or a combo that play well.

    I have the following in hand I’m considering:
    Calypso, eureka, galaxy (1oz), Nelson (1oz), Hallertau Blanc, Huell melon, Mandarina Bavaria. I’ve never used calypso, eureka, blanc or Bavaria so not sure what they bring to the table.

    Are you looking to brew a 'traditional' Grisette or a 'new wave' version?

    I’ve used mandarina and crystal in a saison and really liked it. So my recommendation would be mandarina.

    I would think the Huell Melon, Hallertau Blanc, and Mandarina Bavaria would go together exceptionally nicely. You could use any combo of course.

    How about (per 6 gallons):

    1 oz Mandarina B @ 20 mins
    1 oz Hallertau B @10 mins
    1 oz Huell M @ 5 mins

    Probably more new wave. Something a bit tropical for summer

    I should’ve specified up front. This would be for 5.5 gallons and that looks interesting. No small bittering charge at all in your opinion?

    I actually have some crystal on hand. Use it in my cream ale. What did your schedule look like with those two?

    Then I would 'second' Push_the_limits with Huell Melon, Hallertau Blanc, and Mandarina Bavaria.

    Looking back it actually was a Grisette. Here is recipe:
    OG-1.040, 25 IBU
    74% Belgian Pils
    22% Vienna
    4% Carahell
    Bitter to 15 IBU @60 (I used Magnum, but doesn't really matter much what type)
    .5 oz Crystal & .5 oz Mandarina @10 min
    1 oz Crystal & 1 oz Mandarina @ FO, with 10 min hopstand @180F
    My notes sounds like it was good, but could have used more hops. Kind of depends on how hoppy you want your grisette though.

    I like Nelson in my grissette. Like 3 to 5 oz in the dryhop, magnum to bitter with.
