As I just mentioned, I think Cascade's complexity comes through in the variety of "stronger" flavors that come through. You'll taste a beer and go through a series of "vanilla, cherry, fig, port, bourbon, sweet lemonade, grape, etc." in a single beer. Whereas while drinking a Cantillon beer, the flavors are much more subdued and delicate.

I'm not saying Cascade is better than Cantillon, I am just trying to point out different views on the word "complexity."

i understand and agree with you - i was more taking a playful shot at cascade than i was at anyone in the thread. also - i enjoy some cascade beers, but i wouldnt ever put them on the same level as anything made by cantillon.

i don't think there's any way to argue that cascade's wild ales are more complex than even the most common cantillon (bold flavors or otherwise), but honestly i would prefer to drink the better cascade wild ales i've had than good belgian lambics. maybe it makes my palate a bit trashy and unrefined, but give me sang rouge any day.

Which LP? I assume it was the gueuze?

this is good - one less person looking to buy/trade for cantillon.

and fyi OP - cantillon produces lambic (fruit and gueuze predominately); not "sours".

I think american sours are a completely different thing. I love Cantillon more than a lot of other belgian sours and I wouldn't say that they lack complexity but I completely understand your point of view on the american sours. I haven't had any from cascade yet (hopefully soon) but russian river sours are delicious! Very different and very good. Better than cantillon? To some yes and to a lot of others no. It's really all about what you like and when spending that kind of money on beer, just grab the one that makes you happy.

If you get a chance to try Cascade sours, then do it! I have had all (besides one-offs) of Russian Rivers, and I prefer Cascades most of the time. Russian Rivers are awesome though too obviously.
