Harvesting Brett using oak

    I think I read some where that I can harvest Brett by soaking the Brett beer I am currently making with oak cubes. Anyone have any experience?

    Brett likes oak. But why would you want to harvest it that way? Long term storage of some sort? Just pull a sample.

    It's a crazy blend of 12 strains. I heard that you can oak it then dry it out. Brett stays alive. I want to some how store it long term. I.e. Several months

    I wouldnt let it dry out. Just throw the oak cubes in a starter wort in an erlenmeyer flask or mason jar. I've done this before with small staves of cypress wood before and it worked.

    Just be aware that after several months, you will have quite a different composition/balance/viability of strains than when you started, and the next beer may end up quite different. Heck, when you retrieve the oak from the brew, you will have quite a different composition of strains than when it was first pitched!

    To add, have you thought of the taste the oak will give after you have first used it in another beer. I have read when a oak barrel can be used a few times, but the results vary with every use. I,d make a small batch for experimental purpose first.
    Also, could you wash the cubes and harvest the Brett like one would wash a yeast cake?

    It would be better to save a small amount of the brett from the package, put it in a flask with some wort and feed it once a month.
