Has anyone used a Wit strain at the upper temp?

    Has anyone used either Wyeast or White Labs Wit strain at the upper temp of 74F to 75F?

    Looking for any feedback or observations. Does it increase the tartness? the phenolics? etc?

    I'm planning a batch using this strain and I was wondering to myself, hey why not push it to the max temp and see what happens.

    I fermented at around 72 degrees and the only thing affected was the aroma of the beer (it was a little tart). Tastes great, my favorite homebrew so far.

    I used the WLP400 yeast.

    I just brewed a Wit using Wyeast 3944 which I purposefully brewed warmer this time (72-73°F). I had the same notion as you: “hey why not push it to the max temp and see what happens.”

    I will be bottling this batch later this week. Unfortunately I am unable to provide you with a ‘scouting report’ at this time.
