I only have money to buy beers to cellar now and the occassional session beer...has anyone else seen a decline in drinking, so they can buy some good cellaring beers?

Nope - I always buy doubles of everything. Drink one now, cellar the other. Otherwise...how can you compare how the beer has changed with some age?

Im the exact opposite in that the main reason that I cant start a cellar is because I cant stop myself from drinking everything I buy. Instant gratification is a bitch

I do beers in the cellar, some intentional and many not. Over the past several months it has become apparent to me that I would prefer to drink now over cellaring the large majority of the time. Ultimately, there are few beers that I really want to cellar and I am better served buying to drink now and making the occasional cellar purchase.

Ummm no, my gut was the catalyst for my decreased beer consumption.

true, but the budget wont allow for two most the time...sometimes its fun, i guess, to find beers i can keep for a while. especially randomly...

I've definitely been trying to drink my from cellar, but I find myself purchasing and just putting in the cellar until I get to it. Honestly, I just need to stop buying so much damn beer.

No. I've been trying to drink down my cellar but then I keep buying the limited releases, seasonals, etc. as they come out (as well as IPAs which I then drink right away, postponing the cellar beers til later). I'm @ 285 bottles right now, down from a peak of about 330, but I can't seem to get below around 270...

I drink to keep up with my purchasing...haha. I even joined a local bottle-sharing group that gets together every Sunday. Helps thin out my 'cellar' a bit.

I am with you on this one. I never buy beer to cellar unless I am putting something in the fridge to drink.

Im down about a hundred bottles less since I started to slowly thin out the herd and drink some without buying as many new bottles to replace the old ones. Ive also taken advantage of trading quantities of moderately hard to find beers for lesser quantity of rare beers that I wanted to try.

I always tend to get 2 bottles, one to cellar and one to drink pretty soon.......and i also tend to keep a constant flow of IPA's in the fridge so i can indulge nightly.......I like to have my cake and eat it too

No cellar, no problem. Just a small, overstuffed beer fridge. And some beer in the regular fridge...

I had a problem (or at least I thought it was) my cellar was up to 75 bottles after about 3 weeks I have it down to 50. I think I will try to maintain around 50 for the foreseeable future.

I agree...and disagree- with bias. I spend ALOT on my cellar, but I happen to tend bar at a great craft bar. So I can drink all the new releases (available in my area) at will, while buying bottles of the same stuff for the cellar. Don't tell my boss...

I drink about the same since starting a cellar. Most of my cellar though is on a different coast.

Better yet, celler 'em both and buy a fresh one for comparison next year.

Damn! Now I have to buy something else to drink tonight. Hmmm..
