On occasion, I get a bottle in which there is a very small head on top of the beer in the bottle.
and results in a pour with a huge head. Why is there a small head on top of the beer in the bottle?

This was a Cadillac Mountain Stout which is an excellent beer. I have had it before and it was great.
However, the taste wasn't as good as before. I left the bottle out for 10 minutes prior to opening to get a better serving temp.

This part here confuses me. Head in the bottle?

Any idea how the beer was handled before it was opened? If it had been jostled around awhile, it might just be the residual yeast waking up.

You are complaining about having a huge head? Just be happy with what God gave you and stop complaining. Geez!

    A few options...

a.) Don't be so rough with your beer before opening it.
b.) Pour the beer, then allow it to warm. Pouring a warm beer will always yield a larger head.
c.) It's just the nature of the beer.
d.) Just send it to me.

    Cheers!

The beer came from the fridge and was never roughed up. I probably warmed it too long- 15 minutes. I thought it was the residual yeast on top.

However, I have drunk this beer in the past, and there was no issue. The beer tasted better in the past. It could have been sitting on the shelf for too long in the store. Not sure if that's an issue.

The only other time I had issue with this was with the Bruery Saison.

I never understood the pour and then warm idea. If I wait, depending on style, around twenty minutes, I might lose the head entirely, and that's no fun either. Also, dust particles and even bugs could get into my glass while I'm waiting. I've experienced very few beers that had too much head, anyways.

Good advice but d.) should be a.) Just send it to me and I'll confirm your findings.
