Weihenstephaner gets all of the press , but I enjoy Schneider EdelWeiss and Paulaner just as much (maybe even more ).

It's a style of beer that can be sublime when well made and still refreshing when not.

Is it easy to home brew?

Much appreciated for the heads-up to avoid Mad King - with my hop sensitivity, Kellerweis isn't drinkable for me, and no yeast character comes through. People who aren't sensitive to hops all seem to agree it's a good beer, so I won't argue that it isn't. It just falls way more into "pale wheat ale" than "hefeweizen" to me.

For other US hefes, I have heard plenty of praise for Live Oak and Dancing Man, though I haven't been able to try either as of yet. A lot of the others I've tried have also been more akin to pale wheat ales than hefes, at least to me.

Two Brothers Ebel's Weiss is a nice Bavarian-style hefe, and Troegs Dreamweaver is also good. I'm willing to bet almost no US hefes make it to China, though!
