Hefeweizen Mash Discussion

    Not to get too far afield from the OP but has anyone tried citric acid in a hefeweizen, either to acidify the sparge/mash/BK or to add that subtle tartness that great Hefes seem to have?

    I haven't done this with a hefe, but it would certainly add tartness. Anything that add acidity would.

    Ferment the wlp300 warm, like 75 degrees and you will get a banana bomb. Just finished a keg of Hef with the 300 that was fermented at 75. I could never get that out of the 3068.
