Help decide a hop schedule

    I'm brewing a DIPA tomorrow and this is the grain I have (5.5 gal batch)

    13.8# 2-row (81%)
    14.4oz Munich (5.3%)
    13oz Crystal 20 (4.7%)
    12oz Cara-pils (4.5%)
    6oz wheat malt (2.2%)
    6oz honey malt (2.2%)

    This is based on the Can You Brew It? KRB Citra recipe. I don't have that much Citra, but I do have a lot of Galaxy that I want to use. Here's what I have:

    8oz Galaxy (13.3%AA)
    1oz Nugget (13.3%AA - want to use for bittering)
    4oz Citra (11.4%AA)
    3oz Simcoe (12.2%AA)
    2oz Amarillo (9.3%AA)

    I don't intend to use all of these for this beer, but a good amount of them. I hadn't intended to buy the Citra or Simcoe but they had both so I got a bit. Here's what I tentatively had, again based roughly on the Citra recipe:

    1oz Nugget at 60min
    1oz Galaxy at 30
    1oz Galaxy at 15
    1oz Galaxy at 10
    1oz Galaxy at 5
    1oz Galaxy at 0

    1.2oz Galaxy and 0.5oz Amarillo first dry hop
    0.8oz Galaxy and 0.9oz Amarillo second dry hop
    1oz Galaxy last dry hop (all dry hops 3 days apart)

    Other suggestions?

    Also, any help on water suggestions would be great. Our tap water here isn't very good in Phoenix and we have a water softener, so I was thinking about getting RO water and treating with calcium chloride and gypsum. I've tried reading about some of the water chemistry stuff and it still isn't too clear.

    What's the point of only putting .9oz of something to dryhop? Just add the whole thing at that point...

    Also, you make it a point to mention Citra but don't want it in your recipe? I'd prob swap out an oz of Galaxy (add it to the end of the boil) with Citra in dryhop. I also tend to avoid dryhopping varieties that aren't already in the beer so I'd add the remaining Amarillo in the boil somewhere as well.

    I'm fine with it in my recipe, I just didn't have it when I started formulating. I had a bunch of Galaxy, so I just subbed that in to the recipe that Kyle from KRBC gave for Citra on Can You Brew It? Yeah, I might as well put the whole oz in during the dry hop (the odd number probably came from the conversion to a 5.5 gallon batch instead of 7 barrels) and I like the idea of using the other 0.5oz of Amarillo in the boil. Thanks.

    Have you used Galaxy much yet? I made an all Galaxy Pale recently and the hop is amazing. All the late additions created a super fruity aroma profile at first (think I used California V yeast which may have been aiding this) - all mango, pineapple, and lychee mid fermentation. After adding the dry hops it morphed. Now it has the characteristic passionfruit/guava that is often advertized, though it is less potent than pre-dry hopping. The dry hops also changed the aroma/flavor more towards grapefruit with a tinge of pine.

    It has some nice depth/complexity, but overall I think I prefer Galaxy in the boil/hot side vs dry-hopping. This was partly why I mentioned swapping dry-hopped Galaxy with Citra. Plus Citra can be so potent/dank a hop it will go farther in a dry-hop usage than most other hops.

    My 2 cents...

    what are you aiming for as a OG, by the looks of it it might be about 1.070.

    1oz nugget @ 60
    1oz galaxy and citra @ 15&10
    1oz Simcoe and Amarillo @ 5&FO

    personally if i where brewing this beer i would get rid of the 10min addition and reduce the 5&FO additions to 1/2oz of each.

    recently i have been experimenting with Flame Out hops where i add the hops, kill the heat and mostly cover the pot for 10 min before cooling. have not done a side by side with a beer i have not done this with, but i have been really pleased with the beers that have resulted from this.

    to be honest i am agnostic about dry hopping, but if i where to suggest a dry hop addition with the above it would be as follows: 1oz each citra, simcoe, amarillo and galaxy after 2 weeks in primary. dry hop for at least 7 days, maybe 10.
