Help Diagnose My Soapy Flavor

    I've had a lot of beers sit for 3 to 4 weeks. I get a moderate amount of break material in my fermenter. I never got soapy flavors from this part of my process.

    If the 5.2 stabilizer is the unique variable associated with your soapy beers, then it is probably the culprit.

    Yes. 5.2 is a sodium phosphate powder. The sodium will go up. Phosphate used to be a major ingredient in soap.

    Not according to the product itself.

    I just wanted to follow up briefly. Yesterday, I kegged the first beer I made since ditching the 5.2 stabilizer. No soapy flavor at all. Anecdotally, at least, it seems like 5.2 was the culprit.

    Cilantro is the answer! So is beer! THAT would be torturous..

    Odd, I never got that from 5.2 before I stopped using it. That was with several water profiles too. Maybe I'm just lucky enough not to taste soap when I'm drinking beer or eating cilantro. But... nobody else ever complained of soapiness that I am aware of.
