Help me pick a winter brew!!!

    I'm looking to brew either a Russian Imperial Stout or Barleywine for the upcoming cold New England winter. Problem is, I don't want to brew both and can't decide which to brew. Help me out.

    I'm looking for an all grain recipe (adding dme for an OG bump is ok) that will help me make up my mind. Convince me. Thinking something around 10-12% abv so I can age it at least 5 years yet something that will be good this December.

    95% Marris otter
    5% Carastan
    Bittered with Challenger
    Few oz of Challenger and/or Goldings and/or Fuggles @10 min
    Wyeast 1028

    Mash low, sparge a lot, boil long.

    Estimated OG: 1.095 SG
    Estimated Color: 52.5 SRM
    Estimated IBU: 87.2 IBU

    17.00 lb Pale Malt (2 Row) UK Grain 81.93 %
    1.50 lb Roasted Barley Grain 7.23 %
    1.00 lb Special B Malt Grain 4.82 %
    0.75 lb Chocolate Malt Grain 3.61 %
    0.50 lb Cara-Pils/Dextrine Grain 2.41 %

    4.00 oz Challenger [5.80 %] (60 min) Hops 59.1 IBU
    2.00 oz Goldings, East Kent [7.20 %] (30 min) Hops 28.2 IBU

    1 Pkgs English Ale (White Labs #WLP002) Yeast-Ale

    The MoreBeer.com Imperial Stout (extract) is amazing!!! I had planned to age it on American Medium Plus toasted Oak Cubes that I had soaking in Makers Mark. When I went to prep to transfer to secondary I had a semi-sad moment. I debated on bottling it straight w/out the bourbon oak aging because it tasted so amazing. It was about 7.7% ABV so it's a little lighter than you wanted but there was so many nice roasted, coffee, chocolate, vanilla flavor in it right then and there. I bottled 2 bombers before transferring to secondary but went all in since I had the Oak already prepared. Definitely going to brew again and bottle with no oak and bourbon.

    I love the simplicity. How many IBU's do you think is appropriate? And have you brewed this before?

    Ok. I'm sold on the barleywine but I might break down and brew a RIS too. Any recipes appreciated! Anyone try this KTG clone that's floating around???

    I've brewed this and beers like this many times, usually with maris otter, sometimes with golden promise instead, with gravities ranging from 1.090 to 1.120, sometimes with British northern brewer instead of challenger, sometimes with 1968 instead of 1028, but always along the same theme. IBUs for such a beer will vary depending on OG and personal tastes, but I'd say anywhere
    from about 50-90 is appropriate depending.

    I just brewed an English IPA with all Optic malt. It's quite tasty. I'm tempted to brew a barleywine with that. Too little time!

    I'm gonna brew a breakfast stout clone and maybe do it on some bourbon oak chips in the secondary. Hope it turns out good.
