Help w/a cherry stout

    Hey I posted on WBTW but thought this might be faster..I have a 5 gal BB Whiskey Barrel Stout and want to add a little sweetness and dark fruit flavor..any suggestions? Cherry?? Vanilla? Thanks!

    When you say you want sweetness, are you wanting.. sugary tasting sweet, or, just a thicker mouthfeel, as in sweeter with a higher gravity?

    Dark fruit flavor would have come from the malts, but assuming you used a kit?

    Cherry and vanilla go together well, but cherry won't really give you the dark fruit flavors in a stout that I associate the two flavors with.

    Vanilla always works, but you mention it's a whiskey barrel stout.. did you not get any vanilla flavors from the wood, be it chips/cubes or barrel?

    Bit confused on what you are trying to do, with what little info you gave on your beer.

    Thanks-yeah a little thicker,not as dry.and just a little more...depth.
    Again this just a 'kit' and I know I'm limited a little but just wanted a tweak on it.
    I might NOT use the chips after reading differing posts here on BA.

    When seeking recipe advice, you should always post the recipe

    Brewers Best kit:

    FERMENTABLES
    3.3 lb. Special Dark LME
    3.3 lb. Light LME
    1 lb. Amber DME

    SPECIALTY GRAINS
    6 oz. Roasted Barley
    8 oz. Dark Chocolate
    8 oz. Caramel 90L

    HOPS
    .5 oz. Magnum
    .5 oz. Cluster

    YEAST
    1 Sachet
    OAK CHIPS
    2.5 oz. Whisky Barrel Chips

    Based on your comments, it appears you have already brewed this at least once before. Is that right?

    I've done a lot of bourbon barrel cherry stouts. If you age it on cherries, it will thin it out a bit, not increase the thickness. If you do it though, a couple vanilla beans will really help the cherry flavor pop!

    Hey new guy here...want to START this beer this weekend.Only done this a few times but I'm comfortable doing it..again just wanted to add a little something extra.

    You could add some lactose to the end of the boil.. maybe a pound.

    Will lend some sweetness, but not sugary sweet. Will also give you a little body as well.

    Could toss in a half pound of flaked oats maybe.. I find them to make the beer slick, so could come across as thinner.

    You don't have to worry about cherries for a couple weeks. Finding fresh cherries could be a challenge.

    Making the beer sweeter can be accomplished by adding more caramel malt. Special B malt makes a dark fruit flavor similar to raisin and will also add some sweetness.
