Help - Wheat Bear Split Batch

    Hi All:

    After a multi year hiatus I am back into brewing. I am doing my first batch with the girl friend.

    Given she is nice enough to do this with me I need to follow some rules. She likes wheat and raspberry and doesn't like sour.

    On the other hand, I do not like fruit and really like to stick to traditional styles. I have a 10 gallon rig and will be doing a split ferment.

    Her 5 gallons get wheat and my 5 gallons will not.

    QUESTION:

    Do I do a typical Grisette (like whats in the recipe) and settle for a "weird" off style second 5 gallons, or is it worth trying to do some kind of a Hefe or Wit and be traditional on my half and drop berries on the Mrs half?

    If I do a traditional wit / hefe recipe will I get a crappy raspberry beer on the Mrs side?

    Just to clarify and get to the chase. I like Wits and Hefes.

    My girlfriend has a less refined interest in beer and just wants a simple wheat beer with raspberry taste.

    Will a raspberry Hefe/Wit be weird or do I just do a typical grissette and except a bland second half.

    Focus on making her beer the best it can be, and then maybe she'll be more into it.

    If you want to make your half a bit more exciting, ferment with saison yeast, dry hop it with something fun, and add brett at bottling.

    Agree, that's the goal. I am liking using a saison yeast on my half.

    i am thinking about going to like a 6% ABU with 50/50 wheat malt and pilsner.

    Final Recipe for 10 gallons to the fermenter.

    10 LBS American Wheat
    5 LBS American Pils
    5 LBS American 2 Row
    1LBS Sugar

    Mash @152

    90 min boil

    Bitter addition of Magnum 12% AA to 25 IBU

    Mount Hood 1 oz @ 15 min
    Mount Hood 1 oz @ 0 min

    US05 to both on dry

    My 5 Gallon is getting some simcoe dry in secondary and hers is getting rasberrys.

    I am calling hers an Rasberry Wheat and mine an American Wheat.

    Why the sugar? It would be pretty unusual in an American Wheat Beer, not to mention in the hefe and wit styles you like.
