Help with a recipe idea

    Hello,

    My brew club is having a brew-off of sorts where we choose 4 adjuncts out of a hat and need to incorporate at least 2 of them in a beer. In November we will present our beers to the club where we will place our votes on which beer we like the best. I pulled, Cactus, Cranberry, Powdered Peanut Butter, and Pumpkin from the hat.

    My initial thought was to create a holiday type beer with the pumpkin and cranberry but I am not a huge fan of pumpkin beers and would prefer to brew something I may enjoy more. Another thought was sort of a PB&J themed beer. Also, I am going to presume I could use prickly pear and still be ok from conforming to my adjunct list.

    Also, I usually do 5 gallon batches, but in this case, I think I may do (2) 3 gallon batches and decide which beer I enjoy more to send to the club.

    Any help you all could provide would be appreciated and thanks in advance!

    That said, what types of beers do you enjoy making and drinking? The PB and cranberry have many applications and prickly pear is a very interesting ingredient.

    If it were me, nothing sour or funky and no PB anything.

    I would try a cranberry cactus kind of thing. Something with the bit and smell of cranberries up front then a nice refreshing cactus at the end. How I would pull that off, I do not know. But a local guy here did a Dill cucumber pale that I was skeptical about but ended up liking so figured it is kind of do able.

    I am a German style kind of guy but can drink about anything. Not a huge fan of sours though I appreciate the effort....

    Cool. You thinking a pale ale for this in order to highlight the cactus and cranberry?

    Not a huge fan of gose but that sounds like a tasty beer. I wasn't putting the PP and CB together but that seems like the best combo that I have to work from.

    You beat me to it. I was going to suggest exactly this. Sierra Nevada's Gose (Otra Vez) uses prickly pear cactus, and it's delicious. I could see a hint of cranberry melding well with it.

    How do you feel about Belgian styles? I think the prickly pear fruit is your best bet and I think it would work VERY well in a Belgian Table Beer or even a Tripel/BSG.

    The cranberry is tough as it can be tannic. Your best bet for this would have been a sour ale of some type. Actually a prickly pear and cranberry sour would have been my suggestion, if you liked to make and drink those types of beers.

    PB porters are great and you can easily use PB2 for such an application.

    Screw pumpkin. The gourd itself doesn't bring much to the table and, IMO, is not worth using.

    If you are not into making sours really, you can do a quick kettle sour. Not as complex, but easy to rebrew if you mess it up/don't end up liking the results of the beer.

    Do you have to declare up front what you are brewing?

    Agreed. It's only good for pies and jack-o-lanterns. Any brewery that foists an autumn pumpkin seasonal ale upon the unsuspecting public should be guilty of crimes against humanity.

    Hey, don't have to declare and I am not into making sours but the suggested gose resonates with me for some reason. I have started researching and expect I will make this recipe. It's not that I don't like sours, it's just not a beer I would drink everyday. May be fun to expand my neighbors palates as well...

    I love me some Belgians....I may actually brew a triplel as well as a Gose....why not?!?

    If you don't want to do a sour, a PP and CB Saison seems like it might work. Cheers!

    I am going to try a Gose and a Tripel....sourcing the prickly pear now though it is looking pretty pricey. I usually have a bumper crop of PP fruit in my yard but of course this year I don't. I will report back once I have made them.

    Late to the party buuuuuut prickly pear cranberry saison or kölsch came to mind. Or maybe an english mild brewed with 1318 would be nice too.

    For sure I have talked myself into a Gose but may flip a coin between the trippel or a Kolsch...
