Help with a recipe idea

    I would either pair prickly pear and cranberry or peanut butter and pumpkin. I used to make pumpkin butter (think apple butter) and peanut butter sandwiches. I'd put those together in a nut brown ale. If I went prickly pear and cranberry, maybe something pale (to highlight color), I think I'd try a Berliner weisse or a wit.

    You could do two beers with one mash on this! First runnings plus some sort or sugar for the tripel, sour the rest of the mash and do a gose or berliner with the second running. Then just pull a tad for fruit on both.

    A wheatwine/braggot hybrid would be amazing with those fruits and maybe some wine soaked oak staves.

    That sounds great, and thanks for the input, (obrigado!). I am halfway down the Gose road right now and am intrigued to brew a sour as I have never done one. Figuring out the ratio of PP and cranberry will be interesting because I believe the cranberry will be more aggressive than the PP.

    I could always sour a Kolsch as well!

    Only one way to find out!!! Excited to follow this. a PP + Cranberry gose could be excellent in the winter... Might have to brew it.

    Hello All,

    I brewed the Prickly Pear/Cranberry Gose and won the iron brewer competition in my club! Thanks so much for the advice and input. Hopefully, tomorrow, I can take a glamour shot of the winning beer so you all can check it out.

    Sure...this is what I have in my notes...I am a BIAB'er

    (5 gallons/19 L, all-grain)
    OG = 1.048 FG = 1.012
    IBU = 12 SRM = 4 ABV = 4.7%

    Ingredients:
    6 lbs. (2.3 kg) white wheat malt
    4 lbs. (1.5 kg) German Pilsner malt (2 °L)
    2.8 AAU Saaz hops (60 min.) 1 0z
    Gyp - 1 CaCl - 3.5 Ep - 1 phos acid 6.5ml
    7.5 Gal starting water
    1.0 oz (28 g) ground coriander seed - 10 min
    0.75 oz (21 g) pink Himalayan salt (10 min.)

    White Labs WLP029 (German Ale/Kölsch Yeast)
    Ferment at 68 degrees

    I cheated on a couple things as this was my first Gose and wanted to reduce the chance of really screwing it up...I added 5ml or so of lactic acid after fermentation to get the ph down to 3.5 or so, and added prickly pear extract and pure organic cranberry juice after kegging in ratios until I liked the taste.

    The actual unadulterated Gose was pretty tasty even prior to the addition of the PP and CB.

    Next time, I am going with a Goodbelly sour and am thinking about maybe a sour watermelon wheat. Wasn't a fan of sour beers, but I found myself going to the tap over 5 other beers and was almost out of the beer before the competition! lol

    With those choices, I'd probably do a Peanut Butter and Pumpkin beer. I agree with others about pumpkin adding very little flavor, but if spices are allowed, I think pumpkin spices could work with peanut butter. And the obligatory actual pumpkin would be in the beer so as to adhere to the rules.

    I certainly played with the idea of using those but just couldn't visualize a beer I would enjoy drinking. Peanut Butter is awesome as well as pumpkin, just keep them out of my beer!! Lol..
