Help with "cheesiness" in sours

    Ok, so far as contenders we have: old hops, butyric acid, methylbutanoic acid (maybe from over Brett or the old hops), pedio/and or lacto.

    Science dammit...

    Do breweries know or measure these acids during the brewing process?

    Hmmm... this past Friday I popped my first ever Fantome Saison with a buddy of mine and we both agreed that there was a definite blue cheese-type quality about it. I'll be watching this thread with interest.

    Alpine Chez Monieux is straight up blue cheese. It pairs well with buffalo wings.

    I'm pretty sure that I've seen the brewmaster of Jolly Pumpkin (a sour-only brewery) post on these forums...maybe they would chime in? Unfortunately I do not remember their user name...

    Absolutely. Just had this for the first time and it has a ridiculous blue cheese funk to it. Glad I like blue cheese!

    Last cheesiness I found was in the New Glarus Cranbic (was old). Overwhelming to be honest.

    Probably lactobacillus. Depending on what's going on with the rest of the beer (other yeast/bacteria profile, malt profile, etc...), you can definitely get a dairy/yogurty/cheesy aroma and taste from lacto-forward beers.

    It sounds like your wife likes fruited sours and acetic-forward sours. Those flavors probably cover up the cheesiness of the lacto in those beers. The cleaner and more prominent the lacto profile in the beer (like in berliners and goses), the more noticeable those flavors can be.

    I have described the same notes in some wilds and Saisons. Last night I had a Logsdon Seizoen Bretta and really got this. Is she getting a bit of sourness beforehand? THe season I ask, is that I was at first and if she was then maybe that (due to the name of the beer i experienced this in) would double up on the Brett theory.

    I guess the brett could influence it as well. You can sometimes get a musty or mild moldy aroma from brett, which are characteristics of some cheeses as well.

    I don't know about cheese but my Dad thinks they smell and taste like vomit...

    If he has acid reflux disease it's because there literally is vomit in his throat.

    Hey! My dad thinks that about every beer I give him! Maybe they shared a common ancestor and we're long lost relatives or something.
