Help with hop schedule for IIPA

    I’m planning on brewing a Double IPA this weekend and I’m having trouble trying to figure out my hop schedule. I want to use only the hops on hand. I like a dank/piney IIPA with some fruitiness to balance it all out. I will be going for a two-stage dry hop. I have:

    1 lb Magnum
    1 lb CTZ
    ~10 oz Warrior
    ~8 oz Chinook
    3 oz Galaxy
    2 oz Citra
    2 oz Amarillo


    Other info:
    5 gallon batch
    1.080-1.085 OG
    92% 2-row
    4% carapils
    4% demera (weight)

    1056 @ 66 degrees F

    Thoughts? Thanks in advance.

    Given your goal of dank/piney I think I'd use CTZ, Chinook, and Citra for flavor/aroma/hopstand/dryhop (and maybe also bittering). I'd shoot for about 10 oz spread over all the late additions. I'd probably measure out all the hops I want to use for late additions, mix them together, and then divide them up into flavor (2 oz), aroma (2oz), hopstand (2 oz), and dryhop (4 oz).

    My first attempt at a IIPA also happens to be perhaps my best beer yet, and used Vinny's PtE grain bill. I didn't have the same hops, and wasn't going to buy them, so I improvised, following a suggestion by barfdiggs:

    Hops:

    • 1.5 oz millenium FWH
    • 1.5 oz cascade FWH
    • 2 oz cascade FO
    • 1 oz belma FO
    • 1 oz bravo FO
    • 1 oz millenium FO
    quickly cool to 170F and let stand 30 minutes

    Dry Hops

    • 2 oz millenium 14 days
    • 1 oz cluster 14 days
    • 1 oz belma 14 days
    • 2 oz bravo 5 days
    • 2 oz cascade 5 days

    Just tossin' that out there. A big charge of warrior and magnum at FWH with a big flavor charge at the end (with hopstand), and lots of dry hops would be my suggestions.

    I did an 8.8%ABV 97IBU Red IPA a few months ago that is drinking great, lots of dank resin and pine with grapefruit as well. Used CTZ, Chinook, and a blend of Cascade & Centennial (homegrown couldn't separate them). Double dry hopped. Really enjoying it. Recipe is here.

    Hop Schedule:
    FW 1.50 oz CTZ 16.40 AA%
    20 1.50 oz Cascade/Centennial Blend 10.00 AA%
    10 0.70 oz Chinook 12.00 AA%
    10 0.80 oz CTZ 9.00 AA%
    5 1.00 oz Cascade/Centennial Blend 10.00 AA%
    5 0.90 oz Chinook 12.00A%
    WP 0.80 oz CTZ 16.40 AA%
    WP 1.00 oz Cascade/Centennial Blend 10.00 AA%
    WP 1.00 oz Chinook 12.00 AA%
    DH#1 0.60 oz Cascade/Centennial Blend 10.00 AA%
    DH#1 0.60 oz CTZ 16.40 AA%
    DH#1 1.20 oz Chinook 12.00 AA%

    I think Galaxy would be a good replacement for the Cascade/Centennial, maybe a touch of Citra as well. IIRC SN Red IPA they just released in the fall was CTZ, Chinook, and Citra, but I could be wrong, and it is super dank.
