I did three days at room temp and tasted, no diacetyl present so in the chamber it went. Also, use a yeast calculator to determine starter size and yeast cells needed for your beer. I wound up doing a 5000ml starter with two smack packs to net the yeast I needed.

Thanks for the advice. I'm planning a 2-step starter with 1 pack (0.9L and 1.9L according to BrewCipher). Should have enough time to cold crash/decant both times before the holiday weekend.

    Jack,
Can you say what about the blend you preferred? I'm looking at these two (among others) as the choice for the Baltic Porter I referenced in another thread.
    Cheers,

    Peter,

At this point in time I really can't provide too much detail. The Oktoberfest batch(es) that brewed using 2633 was about ten years ago. The best that I can say from memory is that provided some 'extra' complexity that was very pleasing to my palate. Would you enjoy this quality? I have no idea.

    Cheers!

    Jack

FWIW, I'm in the camp that says nothing is better for this style than 2206. Just sayin'.

Wyeast 2206 does indeed make tasty Oktoberfest beers. That was my preferred yeast until I was given a smack-pack of 2633. After that, 2633 was my preferred yeast for this beer style

    Cheers!
