Help with Yeast - 1 gallon to 5.

    So I brewed one of the best IPAs I’ve made in my brewing life (just citra and el dorado). I brewed it in a 1 gallon batch and used an entire 1 month expired safale 03 packet. So everything I’ve read after doing so was that one yeast packet was way 2 much. However based on my pallet and several other people who had it, It had no off flavors.
    My question is, if I want to upscale it to a 6 gallon batch, should I just use 1 or two packs? I know using 6 would be way over kill especially since I’d be buying unexpired packs.

    Pitching 1 packet should be fine, but if you feel that you need the extra security, pitch 2. You'll only be out a few bucks.

    However, you said that the packet you pitched was a month out of date. Best By dates are very capricious, and I figure you still over-pitched, but a lot of that depends on the way the yeast was cared for. Did you notice anything that would be considered yeast derived that you especially liked in this beer? If so, maybe underpitching will be the way to go. If not, overpitching will confirm the hypothesis. The scale of homebrewing makes a lot of the published brewing science negligible. (i.e. the research done is funded by large lager breweries, who are trying to figure out how to cut costs and maintain a standard product on their scale. There are less scientific studies done {Brulosophy} that are self-published online, but take them as hearsay)

    I still think that pitching one packet will be fine. Please report back, and give us your best descriptions of what you did, and the flavors/aromas you got.

    I noticed I said safeale 03, it’s 033. I’d have to say I got a very hoppy and fruit forward beer. I think I’m going to pitch 2 just to be safe. Going to order ingredients today so hopefully I’ll have good news to report back.

    Well I’ve spoken to my local home brew store and my friend who owns a pro brewery and they both said to pitch one pack.
