High ABV Saison

    Just to be 100% clear, @Supergenious was making a point about the percentage of rye in the grain bill. He wasn't confused by the absolute amount (which could be explained by the batch size), he was observing that such a low relative amount of rye is going to make very little difference in the outcome. That would be true regardless of the batch size. So in other words, he was suggesting that you should dial up the amount of rye relative to the other grains if you want to detect any meaningful rye character.

    I'm currently enjoying the heck out of this one:
    10 gallon batch
    17# Maris Otter
    2# malted rye
    1# carapils
    2# Japanese Knotweed Honey (local), added during fermentation

    Hops:
    0.6 oz Centennial @ 60 min
    0.4 oz Centennial @ 20 min
    1.0 oz Centennial @ 15 min
    1.0 oz Centennial @FO

    Whirlfloc @ 10 min

    400ml 2nd gen WLP565 slurry, 14 days old

    OG (pre-honey) 1.059
    FG 1.006

    This looks great. Dig that it is a single hop too.
