High Temp Fermentation yeasts or styles?

    Living in Las Vegas and soon approaching the very hot spring/summer months I'm trying to think how I can keep homebrewing in this period. I do not have a temperature control fridge and would really prefer not to run the air conditioner all day everyday just for homebrewing.

    Temperatures in a dark closet will typically get to low 80s in the summer. I know some ways to get a few degrees cooler would be a water bath or cool towel wrappings. Is there any type of yeast or Style that would be able to tolerate a fermentation as high as 80 degrees? I believe Belgian style yeasts tend to prefer a warmer fermentation temperature. Perhaps a Saison? Any suggestions are appreciated! Thanks fellow BAs!

    Saison is the only one that can go that high.

    Yep, your only bet is a traditional Belgian saison (WYeast 3724).

    I brewed a traditional Belgian saison last summer, and the yeast needed temperatures of 80+ F. to finish fermentation. Give yourself plenty of time, though. It took weeks for my saison to ferment completely.

    I've had great success with Wyeast 3711 at higher temps, but really as said above, any saison yeast should do fine. If you are capable of getting a little cooler, Wyeast 3068 produces a great banana flavor at 73.

    If you get a heat wave, you may also try something with lacto too
