Hill Farmstead Inoculation

    Anyone know what bacterias HF uses for their brews like Vera Mae or Juicy? I'm guessing pedio and lacto?

    Vera Mae just mentions "our farmhouse yeast strain", nothing about other bugs, & Juicy says "our resident microflora", I'm guessing from open fermentation & barrels. Doesn't really say anything about inoculation with other bacteria. Have you heard otherwise? If so, pedio & lacto seem to be the usual agents, so probably.

    I haven't heard or seen anything, but I remember Vera Mae was somewhat sour - I don't think it was from the saison yeast, which was dominated by the tartness, but I could be wrong.
