I'd like to not let any maple fall off her so I was wondering how long to age it without hurting it. I had fresh CBS and it wasnt as sweet as i thought. had one probably over a year that i thought was better. Any insight into the brunch?

It was brewed for the very first time last winter so there really isn't anyone or any data that can be of help.

I wouldn't age them too long. It's already so good why wait, what are you hoping to gain by aging?
Or just don't want to let go of "her"?

I have about half of my case left. My plan is to save four of them and drink one of those every year around Thanksgiving to see if I note any change for better or worse. For science, of course.

It's a collecting type thing. I have a hard time drinking my collection. But also just wondering because I love 4 to 5 year old bcbs but I haven't really made up my mind what I think about CBS. I would like to be able to get as much maple flavor out of it as I can.

Then definitely drink it asap. The maple will only continue to fade as time goes on. I strongly suggest refrigeration if you're looking at long term storage and are wanting to keep any Maple flavor. Cheers man!

Do you mean you want to get rid of the maple flavor?
