Historically Correct Brewing

    I think lot of European breweries have maintained old ways. Samuel smiths particularly comes to mind.

    This is a very admirable project, and I'll definitely have to give them a visit and some patronage if I get out that way.

    Craft beer is all about making great beer- don't really care how they do it- and I am sure there are not to many people on earth who don't want to find the easiest best way to do something, as long as the brewer stays in business and makes great beer.

    Old Stitch is delicious, I get a growler of it whenever Alewerks has it available at their taproom!

    Did not eat food so can't comment on that. We were so offended by the 2 "house brewed" beers and the rude/grumpy bartender, we got out as fast as we could! Absolute WORST beers any of us in our party of 4 have EVER had. I am a brewer. The other 3 in my group are VERY savy "craft beer" drinkers. We can't figure out HOW they could make beer SO bad! Absolutely disgusting, dirty dishwaster, chemical, taste to BOTH of their beers. Couldn't believe how similar the Pale Ale and the Porter tasted. Which is crazy in itself. Bad yeast?? Terrible. TOTAL DISGRACE to brewing...
    Go read "cinnamongrl"s review of this place on urbanspoon for food comments and more on the rude staff. (No. I don't know her...)
    ASHAMED this place is in Dayton...

    I spend a couple weeks in Dayton earlier this year and was pleasantly surprised by the brewery scene: Yellow Springs, Warped Wing, and Toxic Brew were a few I visited. Some decent food places with good beer too like Pies and Pints and others.
    Between higher production costs and lower demand for historic tasting brews, I fear this place might have a rough time making it in that market. Maybe would be a neat touristy place in Williamsburg, Boston, or some other place with lots of historical tourists, but not sure about Dayton.

    As I understand... The beer, actually brewed at GCV, is not available for public consumption due to NY law. CB's brews the commercially available version: the same recipe brewed with modern techniques.

    The museum is a wonderful place, and the brewery is very cool. Both, of their own merits, are well worth a visit if one is in the area. The museum was founded by John (Jack) L. Wehle, who owned Genesee Brewing at the time.

    Its a clever idea and they might be able to duplicate the dress and some of the mechanics of the process but the malt, yeast and hops will be different as will the skill of the brewer, thermometers, hydrometers, water treatment. etc.
