As craft-beer distribution here in Europe is completely different from the US - so let us first know where you're going. Then we can recommend shops and beers  There are many great Irish craft-brews, but they are not distributed in a large scale!

In Galway and Dublin there are the Galway Bay bars. Some nice beers.

In particular "Of foam and fury" a DIPA is very nice.

In Dublin and Cork there is the porterhouse bars. I find their beer average.

In Cork we have the Franciscan Well, Rising Sons which are both brewpubs.
    And also

which always has 10+ taps of beer mostly local Irish. This is the place to go in Cork I feel.

Enjoy your trip. I feel these are good places to start

8Degrees, Trouble, lots more breweries to try.

Ahh gee, I should have looked here before we went just a week ago! Sadly, I had more Guinness than I cared for, and didn't find ANY Murphy's Stout. And it may sound a little cliche, but I had a Hop House Lager 13 by Guinness and quite enjoyed that. This is the trouble with traveling with non-beer drinkers... There was a bar somewhat near the Guinness storehouse that looked quite nice, but I never made it.
