Holiday ale questions

    I'm brewing a holiday ale today and I have orange peel to put in the brew. I'm not sure when I'm supposed to add it or how much to use. Any help would be much appreciated.

    Genarally, with just a few minutes left in the boil. Or even at flamout.
    How much to use? What's the rest of the recipe, and what is your goal?

    I'm following the Brewers best recipe and I bought all the ingredients individually and not in a kit. It calls for a spice pack but I wasn't sure how much to add. It also calls for cinnamon and other spices too.

    Vikeman is right....add the flavors late in the boil. The amount to add is dependent on the grain flavors that you can expect from your recipe, so if you use a lot of malts with a pale flavor, you'd use less flavoring. Most holiday ales are dark and malty, but just how dark and malty is the key.

    an oz of dried peel is commonly used with 5 minutes to go in the boil. That means I'd use about an oz at flamout, or 1/2 oz at 5 min. I'd consider adding the other 1/2 oz after primary is finished and after a taste.

    I have brew with "dry sweet orange peel" quite a few times, the sweet can turn in to bitter in no time.
    1/2 oz, last 2 minute of the boil works best for my recipe.
