Holiday Beer Dishes

    I love cooking with beer, especially grilling. This is my first year hosting Thanksgiving and I am curious if anyone has any holiday food recipes that they have made with beer (i.e. a turkey brine or stuffing, etc.). Feel free to post full recipes or ideas that you think would be cool to try.

    White castle stuffing. The key is to soak the bread crumbs with Hamms.

    If you make cranberry sauce from whole fresh or frozen berries, you can reduce it down nicely for a flavorful sauce. White Ales or super malty beer would be best.

    PBR is a good braising or basting liquid the alcohol burns and you get a malt flavor...sometimes simple is better. Save the complex beers for drinking.

    For the last two days, I have been brining chicken breasts in a homebrewed chocolate stout brine. This morning I made a mole sauce. Just grilled the chicken. .Not too shabby. The mole sauce was almost where I want it and the chicken breast was amazing. The actual recipe was inspired by various on-line recipes and tempered by ingredient availability. I doubt the beer style influenced the chicken - any beer might do -- but it was cooking with chocolate stout was the original source of inspiration,
