Home brew with vanilla

    i added 3 vanilla beans and some extract to my secondary 3 days before bottling. After two weeks in the bottle the beer had great vanilla flavor. A week later it wore off? Any suggestions to maintain same vanilla consistency?

    I think you'd have better luck with longer exposure. Next time I'd mess around with less beanage for 2-3 weeks time and compare

    I did a Vanilla Oatmeal Stout with about 8 vanilla beans in the secondary for 6 days, and it turned out great. Solid vanilla flavor from the first bottle to the last.

    Side note: I just did a re-brew of that recipe with minor adjustments, and didn't get around to packaging it for a while. The vanilla beans were in for 18 days, and the flavor was a bit more astringent than I wanted. Not quite sure if it is the beans but that is my guess.
