Homebrew # 1 fail....# 2 a success!!!... thanks NB!!!!!!

    So after a failed first attempt (apa that tasted like a clove ridden belgian ale) I came back with a NB extract/steeped grains kit called tongue splitter. I cleaned up my sanitation procedures with some star san rather than just using easy clean and i omitted the 16 oz. of my house spring water which i have no idea what it contains... i'm guessing chlorine from my clovey first batch?? This second attempt at homebrew came out Phenomominal and not in a chloro-PHENOmanal way.... I'm a self proclaimed hop head as i truly enjoy Troegs Nugget Nectar, Lagunitas IPA, Bells Two Hearted, Dogfish Head 60 and 90 minute, and of course Weyerbacher's Double Simcoe IPA as I am a west central PA kid with no craft breweries/distributors nearby. This kit from NB came out refreshingly bitter with a great floral/citrusy aroma with a not quite balanced hop bill as I used the 6 lbs of NB Pilsen malt extract and grains which made this beer quite the hop delivery vehicle as NB had promised. I'd like to thank NB for this kit as it left me with a world full of hope as i continue on my brewing career and aspire to brew various craft libations both through kits and self recipce, and eventually all grain. All new brewers out there continue brewing and keep the faith, and always remember..... relax, and have a homebrew!!!!!

    That's good man, but don't ever let an off batch kill your hope (especially when you're young in the game). It happens. And it sounds like you did a nice job of mopping up, assessing what may have caused some of the problem, and rectifying it. Kits make it easy and repeatable. They help you nail your process without having to focus on the recipe too much. Once you've got that, you can go anywhere your imagination and set-up allow.

    I hear you, my first batch was an IPA, it tasted like a Belgian dark. I contribute it to the fact that my bro told me to let the wort chill overnight. So, i basically coolshiped my first beer. Tasted good though and from then on i've been brewing some fantastic brews. I'm really new at it (1.5 years), but I've all ready got a geuze bottled. The sky's the limit, next up M clone. I'm fuckin stoked!

    Drink that IPA fast, I find that Homebrew IPA goes downhill fast.

    He fermented 3 years of lambics in 1.5 years, bottled them up and is waiting for the bottle conditioning.

    No, bought 2 different 2yr old lambic from belgian in a box. Blended them both with a small amount of belgian pale I brewed and let it naturally carb. I guess its not technically a geuze, but it taste like one. Just opened one tonight and after 5 months its carbed. So technically I blended a geuze, not brewed. Either way, I'm fuckin stoked about how this one will age. Just saying that you can do anything you put your mind into. I didn't let the fact that I know absolutely nothing about wild brewing, much less lambics and geuze, stop me from trying to create one of the toughest beer to create.

    As a member of the Northern Brewer / Brewing TV family, it pleases me to no end that you didn't give up. Don't ever give up! Like you said - look at your process, see where it can tweaked, where it can made cleaner... and brew again. I agree with Timmush - drink it fast and brew more now so you have beer on hand when this one kicks. All for brew, brew for all!
