    Try the maple in something less...well...stout or imperial...the maple just has a very hard time competing with the roast malt and booziness of an Imperial Stout... I suspect.

    Could do a brown, a bit of smoked malt for that bacon and maple combo.

    Yeah . . . a recipe and technique would help a TON.

    Not being kind to your yeast is less than optimal.

    Pitching yeast the day after probably had little to no effect since your initial pitch would (or at least SHOULD) have been through the log phase and into fermentation. Dormant yeast being pitched into an active fermentation won't help a whole lot. It actually would have probably made more sense to re-aerate after 24 hours than re-pitch.
