Honey in a Black IPA!?!?

    Brewing a Black IPA this weekend and thinking about pumping a couple of LBS of Honey in at flame out. I don't recall ever having a black IPA with honey, but I really enjoy IPAs with Honey.. curious on any thoughts?

    Sounds interesting. Getting ready to brew soon and this thread caught my eye. Good luck and post results if you do brew it. Oh, also, what kind of honey? My bees make several different flavors throughout the season. Light fruit
    (cherry,black raspberry,thimble berry and clover) summer variety and rich deep butter scotch flavored in the fall.

    I don't see why not. If you're adding that much honey, you might think about removing some of the base malt (to keep your ABV in the same neighborhood), and possibly selecting mash parameters for a less fermentable wort (or add some body back with carapils/maltodextrin).

    If you want honey flavor in the beer i would recommend either:

    a) adding 75% of honey at high krausen and 25% to keg, or of bottling add that 25% as fermentation slows down
    or
    b) use 5-10% Honey malt

    Option a is best when kegging. The low temps will keep the honey from fermenting out. For this method, bring a cup or two of water to a boil, remove and mix in honey really well then add to keg, rack beer on top from fermentor, purge with CO2 and then shake the shit out of it to mix honey in well.
