Hop Bill Assistance

    I am planning on brewing this weekend with ingredients that I already have on hand to get rid of old(ish) inventory. I am wanting a nice, fairly dry, citrusy IPA with less overall bitterness and more hop flavor and aroma.

    Here is the Malt bill (basically everything I have on hand)

    11 lbs 2 row
    1.66 lbs wheat malt
    .75 lbs crystal 15
    .25 lbs carapils

    Here is an inventory of the hops that I have on hand

    Magnum - 3 oz
    Falconers 7C's - 4 oz
    Falconers Flight - 1 oz
    Centinnial - 2 oz
    Cascade - 1 oz
    Apollo - 4 oz
    Summit - 2.5 oz

    what hop bill would you use with this hop inventory?

    I'd go with an oz or so of magnum at 60 and the C hops 15 min and inward. I'm not as familiar with Apollo or falconers, so I'll stay out of it. You'll need a few more IBUs if you go this route, but I would do some more legwork before just adding some of these other hops in with the C hops.

    The malt bill looks pretty good.

    I say you hopburst it.

    Mix up the centennial, casdade, and both falconers and add one ounce of the mix every five min. starting at the 30 min. mark and the final two ounces of the blend at 0 min. for a 15 min. hopstand.

    Hit it with some Magnum for the first bittering charge. Not sure what IBU's you want, but unless you mash mega low, and use a pretty attenuative strain, it might not be super dry with the carapils, and crystal in there. 1.010 would be a best guess, and would be nice.

    I'd leave out the summit.. Onion bomb for me, and no citrus, but others get the citrus.

    The 7C's is really nice, IMO.

    I'd use Magnum if you need to up the IBU's, but probably do Centennial, and Cascade together with the FF7C's in the boil.. Start at 15, 10, 5, 0, and then a hopstand once you start to cool and have the wort under 180*. Check your IBU's from the 15-0 additions and see if it's enough for ya, if not, add back a 60 min, or a FWH addition.

    Obviously you'll want to dry hop. I would use the Centennial, or FF for that..If you need to add more hops to the boil, the Apollo would be nice.

    15 min:
    .5 oz -- Apollo (18% AA)
    .5 oz -- Falconers 7 C's (9.9% AA)
    .5 oz -- Centennial (9.2% AA)
    10 min:
    .5 oz -- Apollo (18% AA)
    .5 oz -- Falconers 7 C's (9.9% AA)
    .5 oz -- Centennial (9.2% AA)
    5 min:
    .5 oz -- Apollo (18% AA)
    .5 oz -- Falconers 7 C's (9.9% AA)
    .5 oz -- Centennial (9.2% AA)
    Flameout:
    .75 oz -- Apollo (18% AA)
    .75 oz -- Falconers 7 C's (9.9% AA)
    .5 oz -- Centennial (9.2% AA)
    Dry Hop (7 days):
    1 oz -- Apollo (18% AA)
    1 oz -- Falconers 7 C's (9.9% AA)

    Mash @ 152
    Boil 60 min
    Ferment @ 68
