    Happy New Year all! New year, new HB brews. Drops for the week of 1/5, couple-rereleases and a new variant of Zombie Hopsicle (first one was a solid release).

    Anyone have anything on their wish list from HB this year? For me I'm hoping they continue with the lagers. Thought Butchers Gold was a decent start.


    - Zombie Hopsicle (part two) - A variant of the first Zombie Hopsicle and another episode of our fruit flavor-driven collaboration action with Beer Zombies straight outta Nevada! Full distro.

    - Urbs In Horto - You know (and love) this one as much as we do. Big Mosaic. Big Strata. Hazed out and clocking in at 7.5% ABV. Full distro.

    - Newfallen - A slightly modified (but still street legal) Newfallen comin' at ya. Apologies in advance that the cans you'll see in the wild may have the old hop combo listed. Full distro for the hat trick.

    Drops for the week of 1/12. Couple new ones and some re-releases. This rice lager looks interesting.

    - Orange Moss - A continuance of our (and your) love for the moss. This time, we introduce to you Orange Moss, which brings the addition of the Tangiere hop to the unstoppable combo of Citra and Simcoe. Full distro.

    - Blizzard of '67 - One of the first hazy Triple IPAs we mustered. Pairs well with today's snow. Full distro here also.

    - Yutori - Our first go at a Dry Rice Lager on our rig. 5% and hopped with a hop with no name, but a number: HRC-004. Crispy lovers, rejoice. This one packages on Friday at our spot on Lincoln Avenue, so get there to ensure not-missing-out.

    - Butcher Gold - A fresh batch, comin' at ya. Stock up on the gold so it's there when you need one. Limited distro, but if you don't see it at your go-to shop, ask for it!

    Drops for the week of 1/19. Plenty o' brews for next week, including an ode to Siskel & Ebert, a Brown ale that looks interesting.

    - Two Thumbs Up - 8% and hopped to the rafters with Motueka, Nelson Sauvin and Mosaic Hyperboost. Full distro!

    - Dark Hedges - 7.5% hazy Double IPA from the HB archives, but with a slightly retooled lineup of hops this time. Welcome to the darkest of dark hedges, Peacharine hops. Full distro.

    - Choice Stock - 6.5% ABV Strata & Nectaron-hopped hazy IPA. Full distro.

    - Cooper's Brown - 5.25% easy-drinking American Brown Ale. A little something for you more-on-the-malty-side beer lovers! Limited availability on this one, as it's a smaller batch from our Lincoln Avenue rig. See the store and taproom if you can!

    - Sun-Baked - 7.0%, hoppy and clear IPA that we hopped with Citra, Nectaron and Simcoe Hyperboost. Like Cooper's Brown, this batch is of a smaller size and coming out of Lincoln Avenue, so head there for guaranteed scoopage. Limited distro may follow in the weeks to come though.

    Like most of Dan Grzeca’s labels Two Thumbs Up is killer. Looking forward to next weeks beers as well as that rice lager.

    Drops for of 1/26. Couple of rereleases including on of my all time favorite HB releases, Snorkel Squad.

    - Double Snorkel Squad - The double version of the single version here. All Citra hops, hazy, juicy and of the Double IPA sort. Full distro deliciousness.

    - Inscription Rock - Clear IPA inscripted Inscription Rock making its comeback with a only-slightly retooled hop lineup - this time, it's better than ever riding the backs of Mosaic and Krush. Super tasty. Full distro here as well.

    Drops for the week of 2/2. Nothing crazy this week, 3 pretty solid re-releases.

    Cosmic Fountain - 7.5% and hopped with the unstoppable Citra and Mosaic with a nice helping of Waimea. Get cosmic with us. Full distro.

    Interocean - Also 7.5% and also hopped with mosaic, but this one paired with Nectaron - one of the more exciting, newer hops in our toolbox in recent years. Also full distro.

    Your Wish Is Granted - Also also 7.5% except this time clear - and hopped with Citra and Nelson Sauvin. Fun note, this beer back in its first ever iteration was the first time Hop Butcher as a brewery ever used Nelson Sauvin. To boot, it was organic Nelson Sauvin and we shelled out $24 per pound for it! Long story short, we're excited to have this gem back. Full distro! Weekly thanks for tuning in, everyone!

    Really liked Yutori, grabbed a 2nd 4-pack of it. I'm no expert on the style, but I'm a sucker for a nice dry, clean rice lager, and this one is great (to me).

    Drops for the week of 2/9. Couple of redrops and a couple new ones. Always liked Sweet Home and I Want To Believe. Wouldn't mind checking out this 16% BA Barelywine.

    - Sweet Home - 6.5% ABV and hopped with the dream team of Citra, El Dorado & Motueka hops, this hazy IPA is quickly becoming one of our absolute favs in our lineup. And absolutely nothing beats that artwork from Grzeca! Full distro.

    - I Want To Believe - An absolute gem of a juicy, hazy Double IPA from our early days. Always good to see this X-Files inspired artwork rolling down our canning line. Also full distro.

    - Waves of Winter - From our Lincoln Avenue rig and of the smaller batch sort, we're set to can this six percenter next week as well. Can anyone name another HB beer where we use Eclipse hops? Limited release/distro - make your way to Lincoln Avenue to scoop this one!

    - Resplendence - Clocking in at a massive 16% ABV, this barleywine was aged for 48 months in Old Rip Van Winkle (10yr) Bourbon barrels. It's not only bonkers delicious, it may be the largest beer we've ever released in the history of HB. Retail store-only release. Very limited quantities will be available when we open at 11:00am on Friday the 14th.

    The barleywine is their best BA beer to date imo.

    I'd agree. It's not VSOJ or anything (in my opinion) but it's better than any BA beer I've had from them.

    Drops for the week of 2/16. Redrops and new one. May have to grab this Peacharine hopped brew and the clear IPA. Anything with Peacharine I've liked and HB has been releasing some solid clear IPAs the last few years.

    Tavern King is good but OG Tavern Cut is still the best imo.

    - Tavern King - The 8.0% Hazy Double IPA mash-up of Tavern Cut + Kielbasa King IS BAAAAAAACK! Enough said. Full distro.

    - Peak Peacharine - The latest in our 10.5% Hazy Triple IPA, single hop varietal deep-dive. This hop is incredible and we hope you enjoy this juice bomb of a exposé on it. Full distro.

    - Cooler By The Lakefront - 7.0% and clear as all get up, it's good to see this one again. This time, one of the hops has a name (Krush)! Full distro.

    Drops for the week of 2/23. A few rereleases and a new Hop Water. Fat Bear is one decadent stout and one of the better local Peanut Butter stouts I've had.

    Will probably grab Narragansett Ridge, missed this one the first time around. Name comes from a continental divide that runs down Narragansett Avenue in Chicago through Oak Park along Ridgeland Avenue. I liked the first release of the Hop Water HB released, may pick this up as well.

    - Fat Bear - The one and only. Huge, chewy, peanut butter-y chocolate delight. If you see it, buy it. Full distro.

    - Narragansett Ridge - 8.0% ABV juicy hazy Double, hopped with Citra & Nectaron. This is this one's second time around, so all of us at the brewery are excited to see it tee'd up on the canning line. Full distro.

    - Tropical Hop Water For The World - SURPRISE! Our first hop water variant. Totally free of alcohol, but packed with all of the hoppy flavors and aromas you know and love, this is the hop water you know PLUS an unstoppable tropical edge and instead of 12oz, in 16oz 4-packs! Limited distro to start, but available to all who order, so if you want to get your hands on this one and don't see it at your go-to shop, tell them to request it! Quick note - don't miss "Teetering Wooden Crates of Oranges," a super small batch of Extra Pale Ale that we bombed with orange zest over down der on Lincoln Avenue. It's a tasty one and probably won't see much distro, so hit us up!

    Been trying to get through all the brews in my beer fridge and made enough of a dent to justify taking a trip to Binny's to grab some HB this weekend.

    Yutori: Loved this Japanese style rice lager, and the best Lager HB has brewed up to date imo. Clean but with hint of sweetness/Maltiness. I could crush these all day long.

    Choice Stock: Strata and Nectaron blend nicely. Blueberries and some citrus with some dankness. It's good, but it's a typical HB hazy you've had before.

    Drops for the week of 3/2. New variant in the Travelling Scientist series and a mashup that looks interesting. Had a few of these mashups in the past and some weren't bad.

    Also Fat Bear week starts this weekend.

    Simcoe Traveling Scientist - The latest and greatest in our hazy pale Traveling Scientist series where we dive in on a specific hop and then employ only the best hop technology that the hop scientists have discovered in order to infuse the most intense hoppy hopness of that specific hop that has ever been hopped into a (insert hop name, in this case Simcoe) beer. Full distro!

    Lord Octomoss - Our 8.0% ABV hazy Double IPA mash-up of Lord Octopus and Green Moss, hopped with all kinds of unstoppable Mosaic, Citra and Simcoe hops. Also full distro. Don't forget to peep those timely signal boosts below.

    Fat Bear week starts TODAY (Fri) when we fling open the doors on Lincoln Avenue. Come see us about a flight of Fat Bear variants - while they last.

    Picked up Narragansett Ridge. Pretty solid hazy with Citra and Nectaron. Nice and dank with notes of pine and citrus.

    Pretty simple, but I miss the days of these simple hazy IPAs.

    Drops for the week of 3/9. Couple new ones which includes a 10 year anniversary brew! Will definitely be grabbing this one. Also included is the rerelease of their hop water.


    Next week is a big one. While many of you already know we celebrate the anniversary of our taproom and store on Lincoln Avenue every November and just a few short months ago, notched two exciting years there, another anniversary that we've been more quiet about over the years has been simply brewing and making beer. If you can believe it...drumroll please...the end of next week - let's go with March 15th - marks a full decade of this crew brewing the bombest beers we can make for your drinking pleasure.

    To celebrate, we present to you "A Decade of Hop Decadence," a hazy Double IPA hopped with our favs - Citra, Mosaic, Simcoe & Galaxy - and wrapped in a beautiful, special edition anniversary gold. If that isn't a real color, it is now. Full distro.

    Riff Driven - 7.5% hopped-up rock and roll here, everyone. Cheers of Citra, Eclipse and Sabro and every now and then a holler for "Free Bird" but expect main line juice here. For extra credit points, can anyone guess which other Grzeca piece (a hazy DIPA we bring back typically once a year and in a purple can) is the brother to this artwork? Oh yeah, full distro.

    Drops for the week of 3/16. A new one and a few redrops.

    - Myriad of Pyramids - 7.5% ABV Peacharine & Simcoe-hopped Hazy Double IPA making its second return in the pantheon of Hop Butcher brewskis. Many a fond memories of this one being exceptional last time, so excitement is high around the brewery to see what the latest crop years of both varietals do in the proverbial ring together. Grzeca on that purple rhino wrap. Full distro.

    - Welcome to Zumo - 6.5% ABV Citra & Zumo-hopped Hazy IPA. Welcome that new-new. Let's see what Zumo hops from Segal Ranch in lower Yakima Valley. Rumor has it they bring citrus, citrus and more citrus. Full distro here as well.

    - Hydrofoam - 6.5% AABV Citra, Motueka & Motueka Subzero Hop Kief-hopped IPA. Last, but certainly not least, we have some clear beer for y'all. Citra and Motueka hops with an emphasis on the latter. Full distro.

    Drops for the week of 3/23.Rerelease of one of their pizza series brews (which was solid) and a new hazy. Also a new variant of their Hop Water.

    - Double Pepperoni - Equipped with a veritable army of top notch Simcoe, Nelson, Vic and Citra hops, this may or may not double as an unbeatable pizza order as well. Go ahead and try it for yourself and report back to us. We wager you will not return without agreement! Full disto on this one.

    - Aspect of Aries - This here is an 8.0% Hazy Double IPA maiden voyage into a potential series of beers we are newly excited for. We steered our visuals to the world of zodiac for inspiration and focused on hops that the finest minds of Hop Butcher felt embodied said signs. The result was quite delicious. Full distro here also.


    - Pink Citrus Hop Water - We are STOKED about these hop waters and based on how you all are drinking them up, you are too, which is the most awesomest awesome that ever awesomed. Next week, we welcome pink citrus to the hop water family. Scoop it while its available! It's awesome!
