I wanted to see what flavors/characteristics different hops have to see which ones I prefer. Can anyone recomend beers that profile the flavor/characteristics of a specific hop?

Row 2/Hill 56 is a better example of Simcoe. In the spring, Peak Organic has a Simcoe pale ale that's a pretty good example also, although as a beer overall it's not really special.
Its somewhat difficult for me because a lot of the hoppy beers I like are not single hopped, have a really standout hop among the others used or the brewery doesn't advertise what hops are used but here are a few I can think of: Sorachi Ace-Duvel Triple Hop 2013 Columbus-Hangar 24 Columbus IPA Cascade-SNPA Galaxy-Schlafly Tasmanian IPA
PtE is mix of Columbus, Simcoe, Centennial, and Amarillo - all great hops but it will not show you what Simcoe is like on its own. Edit: The rest of your suggestions seem right on the mark afaik.
The bottled version of Hop Back Summer Lightning is stuffed full of Goldings. Be aware that the cask version also has Challenger.
