I'm brewing an IPA approx 6.5%. 20g. I have 7 ounces each of Moteuka, Nelson Sauvin, and HBC 342. Looking for more of a hopburst type of IPA.
Haven't used Moeteuka or HBCV 342 yet so I won't comment on the hops. My advice would be to add 20 minute, 7.5 minute, and flame out additions time schedule wise. I also like to cool my wort down to about 140F before adding the flame out addition.
I would have to look up the flavor characteristics for those hops to determine what flavors you are going to get. What are the alpha acids on each? The bigger the AA , the more bitterness you are going to get from them the longer they are in the boil.
I just did a pale ale with Motueka. I got more of a basic lemon aroma and flavor. The bitterness is pretty even with a slightly rough, angular edge. I found it worked well as a complimentary hop, but a bit one dimensional on it's own. I ended up dry hopping with galaxy and citra.
