I just saw a video of Rene Redzepi cooking with these. Has anyone here are tried using them? What do they taste like? Any actual hop character?
Hop shoots have a very delicate/earthy flavor, they do not taste like hops at all. Treat them as you would asparagus. Either a quick blanch or saute with some olive oil, garlic and chives. I have used them before in risotto.
