Hop Variety Quintessential Examples?

    I love tasting a beer and discussing what I'm experiencing. One thing I'm terrible at is picking out particular hop variety flavours. What beers would you say are the quintessential examples of a certain hop? For example Centennial, Citra, Amarillo, Galena etc., etc., etc.

    I'm also trying to nail down why some IPAs/DIPAs I love and why some I hate. I'm convinced it's the hop profile rather than the malt backbone - but I've yet to nail down the hops I like and dislike.

    So, my fellow BAs, I'm asking for your expertise to help enlighten me. Thanks in advance.

    But once the beer starts to have two or more hops and used in different ways all bets will be pretty much off if the brewer doesn't list them.
