    12.0# Wayermann Pale Ale Malt 67.2%
    1.2# Crystal 50-60 (British) 6.7%
    0.5# Wheat (Belgian) 2.8%
    0.25# Smoked Malt 1.4%
    0.1# Roasted Barley 0.6%
    0.1# Chocolate Malt (British) 0.6%
    2.0# Brown Sugar, Dark 11.2%
    1.7# Silan (Date Honey) 9.5%

    Hops:

    2.3 oz East Kent Goldings, (Alpha 5.1%, 27.5 IBU) @ 45 min
    2.3 oz Saaz (Alpha 3.55%, 10 IBU) @ 15 min

    Yeast:

    2 packets Safale S04 rehydrated

    Mashed at 155 deg F for 60 min
    Mashout at 170 deg F for 10 min

    5 days primary
    10 days secondary

    Repitched 0.1 oz of S04 yeast to bottling bucket.
