Hoppy Red Ale

    I am putting together a recipe to brew Wednesday and would love some input...

    Recipe Specifications

    Boil Size: 5.72 gal
    Post Boil Volume: 5.20 gal
    Batch Size (fermenter): 5.00 gal
    Bottling Volume: 5.00 gal
    Estimated OG: 1.056 SG
    Estimated Color: 15.8 SRM
    Estimated IBU: 40.5 IBUs
    Brewhouse Efficiency: 72.00 %
    Est Mash Efficiency: 72.0 %
    Boil Time: 60 Minutes

    Ingredients:

    1 lbs Aromatic Malt (26.0 SRM) Grain 2 8.7 %
    1 lbs Caramel/Crystal Malt - 80L (80.0 SRM) Grain 3 8.7 %
    1 lbs Rye Malt (4.7 SRM) Grain 4 8.7 %
    8.0 oz Caramel Malt - 60L (Briess) (60.0 SRM) Grain 5 4.3 %

    A few changes have taken place, I am using s-05 instead of 04 and the hops I have at the moment are 1oz chinook and 6oz Falconer's 7C's. I was thinking a hop schedule like this...

    .5oz chinook at 60 min
    1oz 7C @ 20
    1oz 7C @ 10
    1oz 7C @ 5
    1oz 7C @ 0
    2oz 7C in the keg

    I'm shooting for about 40ibus and something hoppy but I think this might be a bit much. Let me know your thoughts.

    Seems reasonable to me, assuming that you really like 7Cs.

    Might be a little heavy on the Aromatic malt, I might cut it in half and replace the remainder with base malt.

    I haven't used seven c's, so I can't comment on them. I did a pair of hoppy reds with Amarillo/centennial/pacific jade and centennial/EKG that had a very similar hop bill, that turned out nice.

    Oh yeah, this is the old copy of the recipe. The new malt bill has 8oz aromatic and 1.5lbs rye...
