Hoppy Saison Critique

    Hey guys, it's saison season for me, and I wanted to do a hoppier one. The idea is to have something pillowy and bright, with notes of citrus, fruit and a bit of spicy earthiness. I'm going back and forth between Galaxy and Nelson as the complementary hop to Motueka, so any guidance there would be appreciated.

    5.5 Gal Batch

    Water @ 91 sulfate, 72 chloride

    8.5 lbs 2 Row (69%)
    1.5 lbs Wheat Malt (12%)
    1 lbs Munich (8%)
    .75 lbs Flaked Oats (6%)
    .5 lbs Acid Malt (4%)

    Mashed at 149F

    .5oz Columbus @ 60
    .25oz Galaxy @ 10
    .5oz Columbus @ 5
    2oz Motueka @ FO
    .75oz Galaxy @ FO
    1oz Motueka WP @ ~170F for 30 min

    Yeast Bay Saison Blend II pitched at 68F and allowed to free rise

    1oz Galaxy DH as ferm slows
    1oz Motueka DH as ferm slows
    2oz Motueka DH 7 days prior to kegging

    Thanks for any guidance - haven't brewed anything like this recipe before.

    What's your planned OG and FG?

    I've done big saisons a few times with 3-5 days dry hopping with Nelson, Mosaic or something similar on top of the standard Saaz hops.

    Recipe looks solid and like something I would definitely brew. I'd probably omit the Munich though, because I think it's working slightly against some of the flavors you've got going on, but honestly, it'll probably be great either way.

    I would can the Munich also. Nelson works really as does Amarillo in a saison.

    Estimating 1.055 down to 1.006.

    Thanks for the feedback - I didn't completely get rid of the Munich, but I cut it in half and upped the 2-row. I like what small amounts of Munich has done for my hoppier beers (in lieu of cara/crystal), so we shall see how it performs here.

    I'll be brewing this today. If all goes well, this will probably become the grainbil for my saisons this spring/summer. Up next is Yeast Bay's Wallonian - going to hop it much more traditionally for that yeast.

    I'm drinking an APA that was bittered with magnum then all montueka the rest of the beer. I get intense "juciness" almost like juicy fruit gum. I'd say galaxy over the Nelson if you want to reinforce the fruit.

    I brewed a Calli Common with boatloads of Motueka, and all I got was intense herbal, grassy flavours. I need to revisit that one.

    FWIW, I brewed a saison recently with galaxy and amarillo, and it's tasting very good – crisp and fruity. No experience with Motueka though
