Hops you WILL NOT bitter with

    This is true, moreso for some palettes than others. I've had SMaSH's with Summit and they are onion/garlic bombs.

    When I use summit it is a small amount at 30 minutes and I've never gotten that garlic or onion flavor.

    I use nugget for bittering in almost 90% of my beers- its so clean. I do not like simcoe, chinook, citra or amarillo before 30 minutes. I don't really like simcoe at all, unless it is a small late addition, with tons of other hops added at the same time to tame the pine.

    I know what you mean by the smell of the hop. It never ceases to amaze me at how different people have such different impressions with taste. I know I have drank a lot of beers that people talk about an onion smell or taste and I almost never get that. I have only had one or two that gave a bit of an earthy onion that I do not find unpleasant and that is usually simcoe for me.

    I agree on the Chinook, but instead of warrior I go for Magnum. I wouldn't have any issues using warrior though.

    I agree...Chinooks can be harsh if overused, but along with Nuggets and CTZ are some superb bittering hops

    I also just tasted a batch with chinook as a bittering hop and it was DEF. to harsh, gonna use Simcoe next!
